Easy Peanut Butter Cookies

I hope all of you are having a fabulous week. One thing that can make a fabulous week better is a great cookie. These Easy Peanut Butter Cookies are perfectly crisp, yet chewy. They have a great peanut butter flavor (but not overwhelming) and they're sure to brighten your day. 

Spring is officially just around the corner, but this week feels more like winter here on the island. Cold, windy, and yucky weather makes me want delicious comfort food. And while I'm on my "Lent Diet," I can't eat any of the things I'm craving. Just looking at these Peanut Butter Cookies and knowing that Spring will eventually have to show itself, and and all its glory, makes me feel so much better!

Easy Peanut Butter Cookies

Recipe from The Recipe Hall of Fame Cookbook
Makes 3 dozen cookies

Ingredients:

1 cup unsalted butter, softened
1 cup peanut butter
1 cup granulated sugar
1 cup firmly packed light brown sugar
2 eggs
2 1/2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt

Directions:

Preheat the oven to 375*F. In a large bowl, cream together the butter, peanut butter, and sugars. Beat in the eggs. Sift together the remaining ingredients in a small mixing bowl. Stir the dry mixture into the wet mixture. Cover the bowl and refrigerate the mixture for 1 hour.

Roll the dough into 1-inch balls and place on an ungreased baking sheet. Flatten the balls with a fork, making a crisscross pattern. Bake for 10 minutes or until cookies begin to brown. Remove immediately from cookie sheets and transfer to a wire rack.
